I absolutely love this time of year… the music, the friends and family, the decorations, the presents, and the food, including the cookies!!! During the holiday season, we all do a ton of baking. I love making plates of holiday cookies to share with friends and family. Participating in the Food Blogger Love Cookie Exchange makes this time of year even more fun!
I sent a dozen cookies out to three different bloggers and received three different kinds in the mail. Thank you to The Baking Fairy, Hall Nesting, and The Saucy Southerner for the delicious cookies I received. I got a wide variety this year: Double Chocolate Chip Cranberry Cookies, Butterscotch Oatmeal Cookies, and Cream Cheese and Lemon Sugar Cookies. They were all super yummy, but I especially enjoyed the sugar cookies… I really had to be careful with those ones! I could have eaten the entire container in one sitting.
Now for the cookies I sent out the three food bloggers to enjoy… White Chocolate Butterscotch Cake Make Cookies! I’ve made these several times before and they never fail me. I even added green color to the dough for St. Patrick’s Day this year.
The original recipe called for only butterscotch chips, but I must have been channeling my mother with I was testing them out. My mother almost never makes simply ‘chocolate chip’ cookies. She’ll throw in whatever chips she has in the pantry… milk chocolate, white chocolate, peanut butter, butterscotch, dark chocolate, whatever! She usually has at least two different kinds in them. I decided to do a combination of butterscotch chip and white chocolate chips in these. I think they pair well in this cookie. They’re pretty sweet, but a little sweetness never bothered me!
Here’s the recipe for these beauties:
White Chocolate Butterscotch Cake Mix Cookies
- 1 box yellow cake mix
- ½ cup oil
- 2 eggs
- ¾ cup white chocolate chips
- ¾ cup butterscotch chips
Preheat oven to 350 degrees Fahrenheit.
Mix together cake mix, oil, and eggs. Stir chip into batter. Chill dough (an hour or more).
Drop dough onto cookie sheet with cookie scoop. Flatten ball slightly.
Bake for 7-8 min. Cookies should just be starting to brown on bottom. Do not over bake.
