What’s for Dinner: June 2015 Meal Plan (Plus a #HotSummerEats Giveaway!)

It’s June! When I was a child, I remember LOVING June 1, because it meant that school would be out soon. I liked school and was generally a good student, but June meant Girl Scout Camp and swimming and filling my tote bag with books from the library.

I miss having an entire summer of floating in the pool and devouring stories.

This June is extra-special, even though I am an adult and cannot spend my days goofing off, because I’m participating in #HotSummerEats. #HotSummer Eats was created by Camilla of Culinary Adventures with Camilla.

  1. One of my favorite summer meals is an all veggie meal from the garden. Things like green beans with new potatoes on top, fried squash okra, or green tomatoes, fresh sliced cucumbers, tomatoes and onions, corn on the cob, corn bread, and fresh fruit for dessert.

    • I love eating straight from the garden too, Joan! Er…well, straight from the Farmer’s Market, since we don’t really have the space for a garden where we live.

  2. I love eating yummy salsas during the summer months, like mango salsa. It’s always so fresh tasting and delicious.
