Parmesan Crusted FishThis recipe is a real winner. If you’re on a budget, seafood can seem out of reach, but with this recipe you can purchase the cheaper types of fish and still get a tasty meal.

For this recipe, I used swai, which is a kind of fish from Asia that is similar to U.S. farmed catfish, but with a milder, sweeter, less “fishy” flavor. It is extremely affordable, and Seafood Watch gives it a pretty decent rating, which I love. But you could pretty much use any mild, white fish you like with this recipe…and actually, you could probably use it with chicken too if you just aren’t a fish person.

To start, you need to crust the fish using milk and bread crumbs. I used panko break crumbs because they’re my favorite (I love the lighty crispiness), but you could use any kind you like.

Dip in milk and press into breadcrumbs, coating both sides before adding to a hot pan to fry in a little olive oil. You want the fish to fry for a few minutes on each side, until they are just barely done. Don’t overcook!

While the fish is frying, mix together the butter, lemon juice, Parmesan, and spices.

Spread on top of the fish and stick under the broiler for about 5 minutes, until the cheese topping is bubbly.

Now, I know that experts say fish and cheese don’t mix…but those experts must have never tried this recipe! The Parmesan is a perfect compliment to the mild, flaky fish and the bread crumbs give the dish some nice texture.

Parmesan Breaded Fish

This fish is so good that you don’t need fancy sides: I served with some basic baked sweet potatoes and creamed spinach. Yum! My boyfriend agrees: This one was definitely a Pinter-success, and one that I’ll cooking again and again.

Recipe type: Entree
  • 4 fish filets (swai, tilapia, or other white fish)
  • ½ cup milk
  • ⅔ cup bread crumbs
  • 2 Tablespoons olive oil
  • 3 Tablespoons butter, softened
  • 2 Tablespoons lemon juice
  • ½ cup grated Parmesan cheese
  • 1 Tablespoon basil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  1. Heat olive oil in large pan.
  2. Dip each filet into milk and press into bread crumbs to coat.
  3. Fry in olive oil for a few minutes on each side, until just barely cooked through.
  4. While fish is frying, mix together butter, lemon juice, cheese, and spices.
  5. Remove fish to a baking sheet. Top with cheese and butter mixture.
  6. Broil for about 5 minutes, until cheese bubbles.
