There are few side dishes I’d rather eat than potatoes. Just call me the Queen of Carbs.
If anything is worth the carbs, it’s this recipe for Oven Roasted Herb Potatoes, which I made as part of #HotSummerEats. Check out Gourmet Garden on Pinterest, Twitter, and Instagram – they are seriously AMAZING. And I’m not just saying that because they sent me such a generous package of products to try out. One of my biggest issues with fresh herbs is that they wilt so quickly. Their products solve that problem!
The last time I was in Pennsylvania visiting the family, we needed a side dish idea, so we pinterested (that’s a verb, right?) and landed on this Spend with Pennies potatoes recipe. Simple enough, and although we made them in the oven, they would also be perfect in foil packets for the grill if ya got it fired up. You could even do them over hot coal while camping.
I used Gourmet Garden herb pastes for this recipe, and I highly recommend trying them out – but if you’re in a pinch, you could substitute some chopped fresh herbs and olive oil. Or you could even use dried herbs – not as good, but it’s hard to mess up potatoes. Best Tim Gunn voice: Make it work!

These tender, crispy potatoes are the perfect side dish for any meal.
Ingredients
- 2 pounds red-skinned potatoes
- 1 teaspoon Gourmet Garden oregano paste
- 1 teaspoon Gourmet Garden parsley paste
- salt and pepper (to taste)
Instructions
- Cube potatoes and soak in a bowel of cold water for 20-30 minutes. Rinse and pat dry with paper towels.
- Generously spray a baking sheet and spread the potatoes on it in an even layer.
- Mix together Gourmet Garden pastes. Alternatively, mix together 2 teaspoons of olive oil and chopped fresh herbs. Brush over potatoes.
- Sprinkle with salt and pepper.
- Roast at 450 degrees for 30 minutes, until potatoes are fork tender and crispy on the outside.
Notes
You could also prepare foil packets and make these on the grill or over a campfire.

Roasted redskins are a staple in our house. In the oven during cold months and on the grill when the weather is nice.
