I love recipes that do not require me to turn on the oven. The stove top is bad enough when it’s 100 degrees outside!
Here in Virginia it is not 100 degrees outside yet. But I’m sure I can think up another excuse to make these no bake chocolate oatmeal cookies, right? Right! That’s the spirit, everyone!
I remember having these when I was a kid, though my mom and fellow blogger, Sharon, never made them that often. So I had to look up the recipe, and of course I turned to Pinterest. I quickly repinned a recipe from Dilly Ward and then got to work making these easy chocolate treats for my friend’s 28th birthday party.
They really are super easy to make. If you hate baking, don’t be intimidated!
To make this recipe, you need butter, milk, cocoa, sugar, peanut butter, quick-cooking oats, vanilla, and my secret ingredient – chopped hazelnuts!
It’s apparently so secret that I forgot to include them in the picture. What can I say? I’m ninja like that, especially at 10:41 at night when I realize I need something to take to a party the very next day!
I also totally didn’t have an vanilla, but you know what? Vanilla is one of those ingredients that, in most recipes, is nice to have but not 100% necessary. Don’t let a lack of vanilla be your excuse not to make cookies!
Melt the butter, cocoa, sugar, and milk together over medium-high heat.
Once the mixtures comes to a rolling boil, add the peanut butter, vanilla, oats, and my special ingredient, chopped hazelnuts.
The chopped hazelnuts make these cookies for adults.
I don’t mess around with buying hazelnuts and doing the toasting and chopping myself. You could. You’ll want about 1 cup total for this recipe. I like these little 1/2 cup packs that I can just dump right in whatever I’m making. Nuts are always a little pricey, but if you get them on sale, you can store in the freezer so they keep until you’re ready to use them.
Also, my palm looks HUGE in that photograph. It’s not, I swear! It’s the angle!
I’m self conscious about the size of my palm but not in about the fact that at least three of these no bake cookies didn’t make it to the party because they went directly into my tummy instead.
Mix everything to combine and then plop onto a cookie sheet covered in parchment/wax paper.
If you’re pressed for time, they’ll cool faster in the fridge. The usually don’t take that long to harden on the counter, though.
Here’s the printable:
- ½ cup butter
- 2 cup sugar
- ½ cup milk
- 4 tablespoons cocoa
- ½ cup peanut butter
- 3- 3½ cup quick cooking oats
- 1 cup chopped hazelnuts
- 2 teaspoons vanilla
- Melt together the butter, sugar, milk, and cocoa over medium-high heat.
- When mixtures comes to a rolling boil, stir in remaining ingredients.
- Remove from heat. Drop spoonfuls of mixture onto a cookie sheet.
- Allow cookies to cool and harden on the counter or in the refrigerator.
