Mushroom Bacon Spinach Salad - Triple Chocolate Kitchen

Food blogging is all about trying new recipes, but sometimes the old favorites are what we crave most. The other day I made some chili and wanted a salad to go with the chili. I like to make the Strawberry Spinach Salad that was posted here on The PinterTest Kitchen about 2 years ago. It is still one of our favorite salads and it is simple to make.

But, it’s not strawberry season and we like to use what we have on hand. I had some mushrooms, onions and a hard boiled egg in the refrigerator. I also microwaved a few slices of bacon until crispy. Everything’s better with bacon, right?

Time to assemble the salad: I tore up some baby spinach, thin sliced some onions, sliced the hard boiled egg and sliced up some button mushrooms. I mixed them all together and drizzled on the dressing. Sprinkle a little shredded cheese on top and you are done.

Quick and easy and very tasty. Sometimes, a simply improvised dish really hits the spot.

Mushroom Bacon Spinach Salad

This hearty salad is great as a stand-alone meal or can serve as a yummy side dish.


  • Half a bag of baby spinach
  • 1/4 cup thinly sliced sweet onions
  • 1/3 cup sliced button mushrooms
  • 1 sliced hard boiled egg
  • 2-3 slices of crispy bacon, broken up in pieces
  • 1/3 cup canola oil
  • 1/4 cup sugar
  • 1/8 cup cider vinegar
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon yellow mustard
  • shredded cheese


  1. In a salad bowl, mix together spinach, onion, mushrooms, hard boiled egg and bacon.
  2. Whisk together the canola oil, sugar, vinegar, celery seed, and yellow mustard.
  3. Drizzle the dressing over the spinach mixture.
  4. Sprinkle a little shredded cheese on top.
