This is possibly the weirdest frosting ever… but it is so tasty!
I didn’t start out looking for a paleo recipe. I was just looking for something that didn’t use the tradition sugar, milk, and butter ingredients you find in most frosting recipes. Then I came across this 7-minute maple frosting from Healthy Seasonal Recipes.
On it’s own, this is a fluffy meringue-like frosting with a strong maple flavor. I personally think the banana takes to to the next level, though. The sweetness from the maple syrup still shines through, but the frosting is a bit more substantial with the addition of the banana.
This is not a super stiff frosting that is good for fancy piping, but it should hold its shape. If it doesn’t, you haven’t beat the egg whites long enough.
Oh yeah… the egg whites. So, I get it that some people don’t like the thought of eating raw egg. While it is true that you can get Salmonella from raw eggs, if you purchase pasteurized eggs, you shouldn’t have a problem. Note that I said shouldn’t… anything is possible, and certain people shouldn’t eat raw eggs, so talk to your doctor first!
If raw eggs weird your out or you can’t have them, you could make this recipe with heavy cream instead of eggs. It’s still delicious. The recipe just isn’t paleo from a purist’s perspective if you use the cream instead.
The other thing I wanted to note is that you really do need a hand mixer for this recipe, because you need to beat the eggs over heat. At first, it will seem like the mixture will never become anything even close to frosting, but keep beating! I promise, it will come together.
Maple Banana Frosting (Paleo)
Ingredients
- 3 egg whites
- 1 cup dark pure maple syrup
- ¼ teaspoon white vinegar
- ½ teaspoon vanilla extract
- 2 medium-sized ripe bananas mashed
- pinch salt
Instructions

Beat egg whites, maple syrup and vinegar over a double boiler. (Do not beat over heat directly.)

After 7-9 minutes, the egg whites should hold their shape, and you should have a glossy, fluffy mixture.

Add vanilla and bananas to the frosting and beat until all of the chunks of bananas are gone and frosting is cooled.
