The other day, I stopped by the grocery store for a few items…and ended up coming out with an entire cart. They were having amazing sales on items we use often, so no regrets! This actually happens more often than not, causing my boyfriend to shake his head and laugh. What can I say? I love grocery shopping, especially when I get good deals.
He certainly doesn’t complain when I have enough money left over in our weekly budget to buy an extra video game for his new PS4.
Anyway, one item that was on sale was salmon. This is a fish I don’t typically use – we prefer white fish in most cases. But I found a great baked salmon recipe on Pinterest from In Sock Monkey Slippers. I added my own little twist, and the result? It was a hit! I’ll definitely be adding this recipe into my regular stable.
When salmon is on sale, of course.
I made this salmon with onion roasted potatoes, which was really tasty. The onion in the potatoes pairs nicely with the garlic-y fish. I think the feta adds a beautiful creamy texture, but if you’re weird about cheese with your fish, you could leave it off, as pictured below.

This roasted salmon combines the creamy taste of feta with the strong flavors of garlic and rosemary for a delicious dinner.
Ingredients
- 2 large salmon filets
- 1 tablespoon olive oil
- 2 garlic cloves, chopped
- 1-2 tablespoon chopped rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 ounce feta cheese (optional)
Instructions
- Combine olive oil, garlic, rosemary, salt, and pepper in a small dish.
- Place salmon on parchment-lined baking sheet and spread garlic topping over the fish.
- Roast in oven at 425 degrees for about 12 minutes, until fish is flaky.
- Sprinkle feta over top before serving (optional).

Oh that looks delicious! I really love salmon but I’ve never had it with feta, which is also one of my favorites. Thanks for the idea!
