Can I just start off by telling you how much I LOVE going to the thrift store? Seriously. The US’s biggest thrift store is not far from me and I love a good deal. Last time I stopped in, I found a set of 6 popsicle molds for 99 cents! On my way home from my shopping trip, I stopped in at my parents place. I was telling my mother about the molds I found and of course my dad proceeded to make sure I knew that he likes Root Beer flavored pops… hint hint.
So the inaugural batch had to be root beer flavored. But since it’s #CookoutWeek, I decided to make frozen root beer float pops instead after being inspired by Daily Dish Recipes. If you’re hosting a cookout, these are great because you have make them ahead of time and don’t have to rush around making them the day of your cookout. Whenever the kids (or kids at heart) are ready for a frozen treat, just grab them out of the freezer!
You can also make a low sugar version of these pops by using diet soda and no sugar added ice cream. My dad has to watch his sugar, so this was a much better option for him!
Dad obviously approves of these frozen treats!

Frozen Root Beer Float Pops
Ingredients
- 2 cups root beer soda
- 2/3 cup melted vanilla ice cream
- Plus extra ice cream for filling bottoms of molds
Instructions

Firmly pack unmelted ice cream into the bottom of each pop mold (1/2" or more as desired). Place molds in freezer until ready to fill with soda mixture.

Gently combine root beer and melted ice cream. Let sit for a few minutes (for fizzing to die down).

Scoop any foam or bubbles off the top of your soda mixtures and fill each mold. Freeze for 3-4 hours until completely frozen before enjoying.

Wow! that sounds soo easy! I’m definitely going to try these! Yummy! I just love root beer floats-they always remind me of fun summer days when i was a kid–i bet these popsicle versions are amazing.
