A few months ago, Jeffrey and I decided to have some friends over, as we often do on weekends. Since he’s ex-Navy, a lot of our friends are single military guys, which means they don’t get home-cooked meals or baked good very often. I love cooking for the boys! Hm, I seem to have somehow turned into a mom without even having kids of my own yet. :-p
Anyway, this particular night, one of our friends asked if he could bring someone along, and of course we said yes… though this person happened to have Celiac disease, which means no gluten.
I don’t know if you’ve perused our blog… but we’re usually fans of gluten, haha.
But it was the perfect opportunity to try out something new! Whenever we make new friends, I like to find out what they like and don’t like, and use it as an excuse to try a new recipe.
These flourless brownies are SUPER chocolate-y. Really, they are more like fudge, because they are so dense and rich. They are perfect for any chocoholic who can’t have most baked goods due to a gluten-free diet.
Plus, this recipe also has no dairy and no sugar (it gets its sweetness from honey and maple syrup). So it’s a great option if you’re feeding people with different dietary restrictions.
Here’s the recipe. My version is based on a recipe I saw at a paleo food blog that shall remain nameless because man, that recipe tasted like crud! Hahah, sorry, but that is the truth! I had to make a few batches before I got something that was worth sharing with you all and sharing with my guests. 🙂
Flourless Coconut Oil Brownies
Ingredients
- 4 eggs
- 1/3 cup maple syrup
- 1/2 cup honey
- 1 1/4 cup cocoa powder
- 1 tsp vanilla
- 1/3 cup coconut oil
Instructions

Mix all ingredients with a hand or stand mixer to combine well.

Pour into a greased loaf pan.

Bake at 350 degrees for 25 minutes, or until toothpick comes out clean.

Cool completely before cutting and serving.

A healthy brownie that is also like fudge? Oh yeah! Plus, my little one has a dairy allergy so this is perfect!
They definitely aren’t as sweet as normal brownies, so some kids might not like them if they are used to having really sugary food all the time, but if he/she likes dark chocolate, these will be perfect for you guys! And if your kid doesn’t like them… more for mommy hahaha!
