Healthy Chocolate Chip Cookie Pie

Ingredients
  • 2 cans garbanzo beans (about 500g total, once drained)
  • 1 cup quick oats
  • ¼ cup unsweetened applesauce
  • 3 Tablespoons canola oil
  • 2 teaspoons vanilla
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ cups brown sugar
  • 1 cup chocolate chips (or you favorite chips/nuts)
Instructions
  1. Blend all ingredients except the chocolate chips in a food processor. You may have to do this in batches to achieve a smooth texture.
  2. Add chocolate chips to the batter and stir.
  3. Pour into a greased springform pan (8 - 10 inches) and bake at 350 degrees for 35 minutes.
