One Pot Chicken Tortellini Dinner

  • 3 Tbs. olive oil
  • 4 cloves garlic, crushed
  • 1 whole chicken
  • 2 cans (15 oz each) diced tomatoes
  • 14 oz can artichoke hearts, drained and rinsed
  • 1 cup water
  • 1 tablespoon Italian seasoning
  • 1 tablespoon pepper
  • 1 teaspoon salt
  • 2 packages (9oz each) refrigerated tortellini
  1. Heat oil in a dutch oven. Add garlic and cook for 1-2 minutes.
  2. Add chicken breast-side down. Brown for about 5 minutes. Turn over and brown for another five minutes.
  3. Add diced tomatoes, artichoke hearts, water, and seasonings.
  4. Bake in oven at 350 degrees for 1⅕ to 2 hours, depending on the size of your chicken.
  5. Remove from oven and add tortellini. Make sure they are submerged in the liquid, cover, and let stand for about 5 minutes.
  6. Carve chicken and serve with pasta and veggies as a side or mix together for a stew-style meal.
