Parmesan Crusted Fish
Recipe type: Entree
  • 4 fish filets (swai, tilapia, or other white fish)
  • ½ cup milk
  • ⅔ cup bread crumbs
  • 2 Tablespoons olive oil
  • 3 Tablespoons butter, softened
  • 2 Tablespoons lemon juice
  • ½ cup grated Parmesan cheese
  • 1 Tablespoon basil
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  1. Heat olive oil in large pan.
  2. Dip each filet into milk and press into bread crumbs to coat.
  3. Fry in olive oil for a few minutes on each side, until just barely cooked through.
  4. While fish is frying, mix together butter, lemon juice, cheese, and spices.
  5. Remove fish to a baking sheet. Top with cheese and butter mixture.
  6. Broil for about 5 minutes, until cheese bubbles.
