Apple Toffee Pudding Cookies

  • ¾ cup softened butter
  • 1 cup white sugar
  • 1 (3.4 ounce) package instant cheesecake pudding mix
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2¼ cups flour
  • 1 small apple( I had gala apples) diced very small
  • ¾ cup Toffee Bits
  1. Preheat oven to 350.
  2. Cookie sheets can be sprayed with non-stick cooking spray or lined with parchment paper.
  3. Cream together softened butter and sugar.
  4. Add the pudding mix and mix well.
  5. Add the eggs and the vanilla.
  6. Mix together the flour and the baking soda in a separate bowl and then add to the wet mixture.
  7. Stir in diced apples and toffee chips
  8. Drop by spoonful unto the cookie sheet.
  9. Bake about 8-10 minutes or until lightly brown.
  10. Remove from sheet to cool onto a wire rack.
