Chicken with Creamy Sun Dried Tomato Sauce
  • 1½ pounds of chicken breast tenders
  • 2 tablespoons olive oil
  • ½ cup chopped onion
  • 2 teaspoons minced garlic
  • ½ cup chopped sun dried tomatoes
  • 2 tablespoons flour
  • 1½ cups chicken broth
  • ½ cup white wine
  • 1 tablespoon butter
  • ⅓ cup heavy cream
  • ¼ cup fresh chopped basil
  • salt and pepper to taste
  1. Season chicken and add to a hot pan with oil. Cook until just done and remove chicken to a plate.
  2. Add garlic and onion to pan and cook until soft. Add sun dried tomatoes and cook for a few more minutes, stirring occasionally to prevent burning.
  3. Sprinkle with flour and add chicken and wine. Allow to simmer and reduce for 8 minutes.
  4. Add butter and heavy cream. Simmer for 5 more minutes, than add chicken back to pan and simmer for a few more minutes.
  5. Add basil and remove from heat. Let stand for 1-2 minutes.
