Chicken Bruschetta Bake and My Love Affair with Basil
  • 1½ pounds boneless skinless chicken breasts
  • 1 can (14-1/2 oz.) diced tomatoes, undrained (or fresh tomatoes, diced + 2 Tablespoons water)
  • 1 package chicken or veggie flavored stuffing mix
  • ½ cup water
  • 2 cloves garlic, minced
  • 5-6 basil leaves, ripped into small pieces
  • 1 cup shredded mozzarella cheese
  • salt and pepper
  1. Cut chicken into bite-sized pieces and layer on bottom of a baking dish. Season with salt and pepper.
  2. Sprinkle basil and the cover with a layer of cheese.
  3. In a second bowl, mix together the tomatoes, stuffing mix, water, and garlic. Spoon over top of cheese.
  4. Bake at 400 degrees for 30 minutes.
