Pecan Pie Cookies

  • 1½ cup packed brown sugar
  • ¾ cup softened butter
  • 1 egg
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 cup pecans (chopped)
  • ¼ cup heavy cream
  1. Cream together 1 cup brown sugar and 1 teaspoon vanilla with butter and egg.
  2. Slowly add baking powder and flour to create a dough.
  3. Roll dough into balls and place 2 inches apart on ungreased cookie sheet
  4. Mix together pecans, heavy cream, and the rest of the brown sugar and vanilla.
  5. Lightly press on each cookie with your finger to create an indentation for the filling.
  6. Spoon a small amount of pecan filling onto each cookie.
  7. Bake at 350 degrees for 10 minutes. Allow to cool for one minute on cookie sheet before removing to cool completely.
