Ready for what is possibly the easiest quirky dinner recipe ever? I bring you…. Cheese Nib Chicken! Do not adjust your screen. It really is that unnaturally bright orange color.
One of the recipes I make most often is OMG Sour Cream Chicken, but I have to admit, it gets a little boring sometimes. I love the sour cream flavor. I love the crunch of the bread crumbs, and I love how juice the chicken stays. But sometimes, I don’t know, I want a little excitement in my life.
I just realized how sad it is that “excitement in my life” translates to using Cheese Nibs in a recipe instead of bread crumbs. I’m really living on the wild side now.
If you love fried chicken, this recipe and the OMG Sour Cream Chicken recipe are both substitutions, since you still get that crunch, but it’s backed instead of fried.
Regardless, I’m glad I tested this one out after seeing it plastered all over Pinterest. Actually, the original recipe called for Cheez-Its, but Cheese Nibs were on sale, and I can’t resist a discount. I saw this dish on multiple blogs, but hat tip to Winner Dinner, the first one I came across when pinning.
Without further ado, here’s my take on Cheez-It Chicken:
These cheesy chicken tenders are great for kids and adults alike.
Ingredients
- 1-2 pounds boneless, skinless chicken breast
- 1 cup sour cream
- 2-3 cups cheese crackers (Cheez-Its of Cheese Nibs)
- 1/2 cup melted butter
Instructions
- Crush the cheese crackers with a rolling pin in a ziplock bag.
- Cut the chicken breasts into strips (or use chicken breast tenders)
- Coat chicken in sour cream.
- Roll each strip in crushed crackers and place on baking sheet.
- Drizzle with melted butter.
- Bake for 40 minutes at 375 degrees.
