What is the flavor of summer?
Is it watermelon? Maybe corn on the cob? How about s’mores?
Yes, yes, and yes…but for me, the top flavor of summer has got to be barbeque! I love making my own BBQ sauce (awesome on meatballs), and taste-testing packaged sauces in a variety of flavors.
As part of #HotSummerEats, The Sauceology Group set me a little package of treasure in the mail – four bottles of their unique sauces, which are perfect for summertime recipes.
The Garlic Goodness from Intensity Academy has TONS of garlic-y flavor with a good dose of spice. Southern Gold from VooDoo Chef is a tangy and sweet mustard-based sauce. Guava Girl from Pirate Jonny’s packs intense fruit flavor into a unique guava-based sauce. And Chai Curry Chup? This takes ketchup to a whole new level with lots of heat and interesting Indian flavors. It’s also from Intensity Academy.
Instead of using just one sauce…I decided to use all four! I set up a BBQ Chicken Quesadilla bar, and everyone splashed on their favorite sauce. These quesadillas are great as appetizers while you’re waiting for those burgers to grill, or they are hearty enough to be a filling lunch or light dinner.
And yes, I made my own tortillas for this recipe! It’s SUPER EASY to do and they taste so good. Here’s our tortilla recipe.
Although they were all good, I have to admit…Southern Gold was my favorite. I seriously couldn’t stop eating it.
I recommend checking out all the yummy sauces The Sauceology Group has to offer, but keep in mind that you can use an favorite barbeque sauce to make this recipe at home. Or, do what I did and set up an entire bar of sauces and let your friends and family go wild tasting them all. 🙂

Here’s the BBQ Chicken Quesadilla recipe:
This fun recipe lends itself to a "sauce bar" at your next picnic or party.
Ingredients
- 8 homemade tortillas (recipe here )
- 4 chicken breasts
- 4-8 Tablespoons of your favorite barbeque sauce
- 1 cup shredded cheese
Instructions
- Cook the chicken breast and cut into chunks or shred.
- Lay first tortilla on your plate. Add meat from one chicken bread and about 1/4 cup shredded cheese. Any variety of cheese you like will work - we like mozzarella and colby jack.
- Drizzle with 1-2 Tablespoons of your favorite sauce.
- Top with second tortilla.
- Wrap in foil and place on hot grill for 5 minutes, until cheese has melted. Alternatively, you could melt the cheese in the microwave.
- Cut into slices and enjoy.
Notes
Instead of chicken, you could use roasted peppers, onions, and other veggies for a fun vegetarian version.
