I’m always on the lookout for bite-sized recipes that are perfect for parties and potlucks. The other day, the mini Athens phyllo shells were on sale, so I decided to whip up some apple pie bites, based loosely on a recipe I saw on the Athens website.
Oh mama, are they good! They’re just the right combination of sweet and tart, with all of those warm fall spices that everyone loves.
For this recipe, I used pink ladies, which is pretty much my favorite apple of all time since it is so versatile. It is a little more on the tart side, so I sprinkled a layer of sugar over each bite. If you are using a sweeter apple or want to cut down on the sugar in these, you could definitely skip that step. You could also drizzle with a bit of honey instead to add extra sweetness.

Apple Pie Bites
- 2 15- count packages mini phyllo cups 30 mini cups total
- 2 medium-sized apples diced (about 2 cups)
- 3 Tablespoons honey
- 1/2 teaspoon lemon juice
- 1 Tablespoon cinnamon
- 1/2 teaspoon cardamom
- 1/2 teaspoon allspice
- 1/2 teaspoon nutmeg
- 1/2 cup water
- 1 Tablespoon cornstarch
Dice apples into very small pieces and add to a pan with honey, lemon juice, and spices.
Mix together water and cornstarch and pour into pan.
Cook apple mixture on medium heat until apples are slightly tender and the sauce has thickened a bit (about 10 minutes).
Place phyllo cups on greased baking sheet and fill each one with mixture.
Bake at 350 degrees Fahrenheit for 10 minutes.
Serve immediately or chill to serve later.
Recipe NotesFor a spin on the recipe, add toasted pecans or raisins to the mixture. Serve with whipped cream or a scoop of ice cream if desired.
