5 Last-Minute Easter Side Dishes

Okay, so you probably already have your entree picked out for tomorrow. Growing up, we usually had ham on Easter. Yum. But side dishes? Well, that rotated from year to year. Usually something potato-y. Usually at least three veggie dishes. Some kind of slaw, some kind of salad.

Feeling a lack of side dish inspiration? Here’s a little list of options that are definite crowd-pleasers…and go great with ham (or poultry or whatever you’re having as the star of the show)

Allison's Lick Your Plate Potato Salad

Lick-Your-Plate Potato Salad – This is hands down one of my favorite recipes to make as a side dish on Easter. Mashed potatoes and other potato dishes feel a little to heavy for a spring celebration. I love the “picnic” feel of this dish!

Strawberry Spinach Salad

Strawberry Spinach Salad – I love anything with fresh fruit. Definitely a very spring-time recipe. No strawberries? Substitute fresh carrots and make even some baby corn. Or add in another type of berry, such as blackberries or blueberries.

Sesame Bacon-Wrapped Asparagus – This is a fun alternative to the tired green bean casserole that make an appearance at just about every family gathering. If you don’t want to do bundles because the crowd at your house is too large, simply chop the bacon and sprinkle over top. Drizzle with the sugar/garlic dressing, sprinkle with sesame seeds, and roast like normal.

Combined Ingredients for Calico Beans

Calico Beans – These beans are so pretty. Perfect for an April Easter! The burger makes them really filling, so if you want more a side-dish meal, just skip it. you can also leave out the bacon if you are community or vegetarian.

Adding Garlic Brussel Sprouts

Garlic Brussel Sprouts – If you have a hard time getting your family to eat their veggies, give this recipe a try. They have a ton of flavor!
